Toffee Cinnamon Deliciousness

Long time, no blog.

Is it already mid-January?

Between enjoying my college age children home on semester break and getting my paperwork and classes in order for the upcoming semester, I've slipped away from blogland for this little space and time. It's been a good time of renewal.

As I was cleaning out my baking cupboard today, taking inventory of what should probably get used up now that the baking season rush is over, I came across a package of the Heath Toffee Brickle Bits that I used to make fudge. I remembered that I still had a tube of sugar cookie dough in the frig from my mass purchase when it was on sale. I also discovered a cinnamon/sugar mix packet from a frozen pretzel purchase.

So, here's what I did.

  • I opened the tube of dough and made 1/4" slices. I cut each slice in half.
  • I smooshed the dough into the brickle bits, coating both sides.
  • I rolled the dough/brickle into a ball and then rolled it in the cinnamon/sugar mix.
  • Baked at 350 for 12 min. Bake 12 cookies at a time and do not overbake. Let cool on sheet for 5 min.
They are delicious! I want to make them again around Valentine's Day, but after baking, coat the bottom of the cookies in white chocolate!
