Rediscover ...

. . . my 'one little word' for 2012

When prompted to think of one word that would sum up my goals and aspirations for the new year, I was challenged to think outside the box. So many 'resolutions' are made with the best intentions, but carry though is difficult. What I needed to think upon was something that would help me in more than one area of my life so that it would both create and enhance change.

Rediscover.

William Morris is quoted as saying,

"Have nothing in your house that you do not know to be useful, or believe to beautiful".

This says a lot beyond physical items. To me, it also encourages positive words and actions.

The hymn writer, Cecil F. Alexander (1818-1895) sums it up for me:

All things bright and beautiful, all things great and small ...

... How good is God our Father, who doeth all things well.

Rediscover ways to do all things well.

When you rediscover, you change your perspective on things.

Here's one of my pre-2012 rediscoveries:

Who knew bobbins made great hat stands.

Instead of just adding to a vignette - as in the first photo at the top of the page, they can be useful beyond their original function.

May the New Year be filled with rediscoveries for us all.

Cake Mix Cookies

When visiting with a friend earlier this week, I was reminded just how easy and how tasty cookies are when made from a cake mix!

So, I found my recipe and got to work. Throughout the year, I'll use chocolate or yellow as the base and then add either butterscotch or chocolate chips or both! For Christmas, I decided to create some other variations.

First ... Lemmon Crinkles ... just the base recipe (lemon cake mix) rolled into balls and after they are baked and cooled, dipped in powdered sugar.

Next was the spice cake mix ... after baking, dip a pecan half into an eggnog glaze and push into cookie. After they are cooled, drizzle them with the glaze.

For the Almond Joy ... add to the white cake mix base a tsp of pure almond extract. Sprinkle with a little powdered sugar and then dip in chocolate. Chocolate is on my grocery list.

With just a couple of days left, we'll see if there's time for other variations.

Base recipe:

1 box cake mix

2 eggs

1/3 c. oil

Eggnog glaze:

Mix together eggnog (Weigels' is the best, esp. for desserts) and powdered sugar to desired consistency.

Chocolate Crunch Brownie Delight

It was a rainy, stormy day. One where you just knew you would be staying inside. Thoughts of keeping warm, dry, and cozy automatically led to thoughts of things that comfort, which for me include wonderful aromas of fresh baked yummy-ness. So, the search began ... the search for the perfect recipe to make all of those thoughts become reality.

Here is the result of that search - a combination of various recipes discovered along the way. Enjoy!

Bottom Layer:
Combine 1/2 box milk chocolate dry cake mix with 1/2 c. melted butter, 1/3 c. water, 1/4 c. brown sugar and 2 eggs. Then add the other half of the cake mix. Spread into greased 9x13 baking pan (Longaberger, of course) and bake for 30 minutes at 350. Cool completely.

Middle Layer:
After cake has cooled, frost with homemade Hershey's cocoa frosting (recipe on box)

Top Layer:
Melt 2/3 c. peanut butter and 8oz chocolate chips. Pour over 2 c. cocoa krispies. Toss together until well coated. Spread on top of frosted brownie.

Refrigerate for one hour. Cut into small serving pieces and store in airtight container.

Brown Sugar Butterscotch Goodness

Nothing better on a cool, rainy day than something home made baking in the oven.
Perfect day for a new recipe!

Preheat oven 350.

Melt 2/3 c. butter
Add 2 c. packed brown sugar and 2 T. hot water. Allow mixture to cool

Add one at a time and mix well:

2 eggs
2 t. vanilla
2 c. flour
1 t. baking powder
1/4 t. baking soda
1 t. salt

Pour into greased 9 x 13 pan.
Sprinkle butterscotch chips on top.
Bake 25 min. - cool.

(I had to add an additional 15 minutes of bake time when using my Longaberger baking dish).

Enjoy!

Eggnog Glazed Cream Cheese Cookies

Cookies:

Cream together 1 cup butter and 3 oz. cream cheese
Add 1 cup sugar and beat until fluffy
Add 1 egg yolk, 2 1/2 cups flour and 1 t. vanilla. Mix well.
Chill 1 hour
Roll into 1" balls and place on greased cookie sheet
Bake at 325 for 12-15 min.

Glaze:

Mix together 1 cup powdered sugar, 1/4 t. vanilla, 2 t. corn syrup, 3 1/2 T. eggnog
Spread on cookies. Add colored sugar or sprinkles, if desired.

One Week and Counting

It's official. One week today until Christmas. And for the most part, our family is on schedule with the seasonal preparations.

After moving to Tennessee, I decided to finally get back to a more traditional Christmas, decorating-wise. Through the years, we always celebrated, but not necessarily with a traditional tree. One year was a topiary, another year a poinsettia bush. Then I found a spiral tree which is still one of my favorites. My first year in Tennessee before Marlon was able to move here and 98.2% of all my earthly belongings were still in Michigan, I picked up a little pre-lit tree and some decorations to help make the season bright. Then last year, we found the perfect tree.

So, Christmas 2010 has officially began in our household. Marlon spent about 10 hours over 3 evenings restringing the approximately 1600 lights (that included a couple trips for more lights). Then we began decorating last night. A friend of Josh's had never decorated a Christmas tree, so she hung the first ornament

Progress was made with a little help from Mannheim Streamroller and Josh Groban.

While the main tree was being finished, the two little fireplace trees were getting new strands of lights.

The first 'lights out' view of Tree 2010. We sat back and took it all in while enjoying coconut cake and coffee (with the chocolate and marshmallows I made stirred in).

Now to add the train under the tree, decorate the mantel and add the stockings. Oh, and wrap a few gifts, too.

Hot Chocolate - Yum!

Snowman soup on a stick ... Hot chocolate on a stick ... PMS treats on a stick ... whatever the name, the result is the same ... luscious chocolate goodness. If you don't eat it all first, once you've made and assembled everything, place in a mug of hot milk and stir until melted.

After looking at a lot of different recipes, here's what I used after some mixing and matching.

For the chocolate (thick, rich, fudge)

½ cup heavy cream
14-ounce can sweetened condensed milk
3 cups semi-sweet chocolate chips (I used 2 cups and then 1 cup cinnamon chips)
4 squares baking chocolate
stirrers, craft sticks, or candy canes (I used cinnamon candy canes)

Combine the cream and sweetened condensed milk in a saucepan over medium heat. Heat until steaming, stirring often.

Add the candy chips and squares. Remove from heat and let chocolate melt for 10 minutes. After that time, whisk thoroughly to combine.

Spread mixture into a foil lined square pan. Set at room temp for 12 hours. Cut into desired amount. Enjoy with or without marshmallows - with or without milk.

Now the marshmallows:

3 envelopes of Knox gelatin
1/2 cup cold water
2 cups granulated sugar
2/3 cups light corn syrup
1/4 cup water
1/4 teaspoon salt
1 tablespoon vanilla extract
Confectioners’ sugar

In a mixing bowl, sprinkle gelatin over 1/2 cup cold water. Allow to soak for 10 minutes. In the meantime, combine sugar, corn syrup and 1/4 cup water in a small saucepan. Bring mixture to a rapid boil. Boil for 1 minute.

Pour the boiling syrup into gelatin mixture. With a mixer, start on low and gradually move to high speed. Add the salt and beat for 10 minutes (will be fluffy and cooled down). Add in extract and beat another minute or two.

Grease your hands and a rubber spatula with oil and transfer marshmallow to a square pan which has been lined with greased plastic wrap. Press the marshmallow into the pan evenly. Take another piece of lightly oiled plastic wrap and press lightly on top of the marshmallow, creating a seal. Let mixture sit for a few hours, or overnight, until cooled and firmly set.

Sprinkle a cutting surface very generously with confectioner’s sugar. Remove marshmallow from pan and lay on top of the sugar. Dust the top generously with sugar as well. Cut into desired amount of squares.

While the fudge and marshallows are setting up, prepare the items you'll need for packaging:

2" squares of waxed paper

Something to wrap it all up ... zip lock treat bags, plastic wrap, or other closed container. I added a modified 'snowman soup' poem to attach to my bags.

If using candy canes as your stirrer, now is the time to unwrap them.

When fudge is ready, place squares onto pre-cut waxed paper.

Add marshmallow squares.

Add candy canes or stirrers.

Place in zip lock bags/container or plastic wrap.

Not a last minute project - you definitely need to do some planning.

Pumpkin Caramel Cheesecake Trifle

1 package carrot cake mix
1 (3.4 oz) pkg. instant vanilla pudding
1 cup canned pumpkin
1/2 c. water
1/2 c. vegetable oil
3 eggs
1 t. cinnamon
1 t. allspice

Mix all ingredients. Pour into greased 9x13 pan. Bake in preheated oven at 350 for 45 min.
Remove from oven and allow to cool thoroughly. Cut into 1 inch cubes.

Now to prepare the layers:

In a bowl, combine 2 (3.4 oz) pkgs. instant cheesecake pudding with 4 cups milk.
In another bowl, combine 2 (3.4 oz) pkgs. instant butterscotch pudding with 4 cups milk.
Allow to set for 5 minutes while you gather:

Caramel ice cream topping (squeeze bottle works best)
English toffee bits
Chopped pecans

Now the fun begins:

In a trifle bowl or large clear bowl, layer 1/2 the cake cubes on the bottom. Squeeze caramel generously over cake. Next spread 1/2 the butterscotch mixture and then spread 1/2 the cheesecake mixture. Sprinkle toffee and chopped pecans.

Repeat process for second layer.

Allow to chill in frig overnight before serving.

Memorial Day Dessert

Stawberry Cookie Mousse

1 quart strawberries, sliced
1 can sweetened condensed milk
12 ounces Cool Whip
1 box vanilla wafer cookies

Slice the strawberries into thin slices and put in a large bowl. If they're not ripe, crush them a bit to extract some of the flavor.
In the same bowl, mix in the sweetened condensed milk and cool whip. Stir together.
Chop the vanilla wafers in half and add those to the strawberry mixture.
Cover in an airtight container and refrigerate overnight, or at least 4 hours.

Out of Nutmeg ...

Allspice ... Cardamon ... Cloves ... Cinnamon ... no Nutmeg

So, I substituted cinnamon for nutmeg and these Doughnut Muffins are tasty,
if I say so myself.

Preheat over 375 degrees. Grease mini-muffin tin (12)/regular muffin tin (6) or use liners.

Mix 1/2 c. sugar, 1/4 c. margarine (I used butter) and 3/4 t. nutmeg in a large bowl.
Stir in 1/2 c. milk, then mix in 1 t. baking powder and 1 c. all-purpose flour until combined.
Fill muffin cups 3/4 full.

Bake 15-20 min. (mini) or 25-30 min. (regular).

Remove muffins and dip tops in 1/4 c. melted margarine (butter),
then dip in 1/2 c. sugar/1 t. cinnamon mixture.

Cool and serve.

Black-eyed Susan Cocktail

Black-eyed Susans. They grew bountifully in my 3 season garden in Michigan. What an easy way to add warmth and comfort to a room when placed in an old canning jar or milk bottle and placed on the kitchen table.

Well, here's another Black-eyed Susan. The recipe is from Southern Living but of course, I tweaked it to accommodate what I had in the house. It was the perfect complement to last night's season finale of Grey's Anatomy.

3/4 c. orange juice
1/2 c. pineapple juice ( I used 1-1/4 c. orange, pineapple, apple juice)
3 T. vodka
3 T. light rum (I used spiced rum)
2 T. orange liquor (I used Triple Sec)

Fill 2-12 oz. glasses with crushed ice (I used Sonic ice)
Pour each of the white liquors equally over ice
Add equal portions of juice and stir
Garnish with lime (I got some at Sonic when I bought the ice *Ü*)
You can also garnish with cherry, but not my fav.

The Best Ever Cookies

At a meeting last week, one of my colleagues brought these cookies she had made. They absolutely melt in your mouth. They're a step above shortbread - or maybe two or three steps. Anyway, I wanted to make them for a DAR meeting today. They came out beautifully and here's the recipe. Thanks, Rhonda B!

Just the Best Cookies

1 c. butter
1 c. sugar
1 c. brown sugar
1 egg
1 c. oil
1 c. oats
1 c. crushed corn flakes
1 c. chopped pecans
1/2 c. coconut
3 1/2 c. all purpose flour
1 tsp. baking soda
1 tsp. vanilla
1 tsp. salt
Powdered sugar (to sprinkle on cooled cookies, if desired)

Pre-heat oven to 325. Cream butter and sugars until light and fluffy. Add egg and blend. Add oil, mixing until well blended. Add oats, corn flakes, coconut, and pecans. Stir until mixed. Add vanilla. Add flour, baking soda, and salt. Mix well. Form into balls about the size of a walnut. Place on ungreased cookie sheet and flatten with fork. Bake 12 to 14 minutes. Let cool slightly before removing from pan.

Sunshine on a Tennessee Thanksgiving Day

We've got sunshine on another Tennessee Thanksgiving Day! I've already planned on enjoying dessert and coffee on the deck this afternoon. The house is quiet, but filled with those familiar scents that bring memories of Thanksgivings past.

When the sun shines like it is today, it reminds me of the Thanksgivings spent here as a child. After the meal, the whole group of cousins would journey through the woods and over the river (creek) to one of the family's old homes. I was fortunate enough to visit that place one more time a few years ago and salvage some of the wallpaper to design in a paper quilt pattern. As I worked with each brittle piece, I couldn't help but wonder what life was like in that old home. My Mom never lived there, but she and dad visited many a time before her folks moved 'up on the road'.

I've set out the turkey salt and pepper shakers that were used at our family table for as long as I can remember. They're not the most practical, but the meal would certainly be lacking without them. It will be a little smaller gathering around the table this year. My brother will join us, but the kiddos have sojourned to the northland to visit this holiday. The menu is pretty much the same - except - for the first time ever, no sweet potatoes. They apparently got left behind in the cart when leaving the grocery store. I hope that the one who finds them prepares them properly and enjoys (candied, not fluffed). Trying a new pie recipe this year. Mom loved pecan pie. Dad loved butterscotch pie. Marlon loves pecan pie. I love butterscotch pie. So, Butterscotch Pecan pie is on the menu today, which we will enjoy on the deck in the sunshine (did I mention that already?).

Butterscotch Pecan Pie

1 unbaked 9-inch deep-dish pie shell
1 bag Nestle Toll House butterscotch flavored morsels
3/4 c. light corn syrup
3 large eggs, room temp
1 T. all-purpose flour
1/4 t. salt
1 1/2 c. pecan halves, coarsely chopped
Whipped cream, opt.

Preheat over to 350.

Melt morsels in uncovered microwave safe bowl for 1 min. Stir. If necessary, microwave at additional 10-15 second intervals until morsels are melted.

Add corn syrup, eggs, flour and salt to melted morsels. Beat on medium speed until smooth. Stir in pecans. Pour mixture into pie shell.

Bake 45-50 min. or until knife inserted into center comes out with little bits of filling attached. Cool on wire rack for 2 hours. Refrigerate for 1 hr. or until serving time.

Early Morning Baking

I had to take a breakfast casserole in to work today for an appreciation breakfast. Decided to modify a french toast recipe shared with me by my friend, Elizabeth.

Quick, Easy, Yummy!

French Toast Casserole

Bring ½ c. butter, 1 c. brown sugar and 2T. light corn syrup to a boil.

Pour into greased 9x13 baking dish.

Cube or tear into pieces 1 loaf of bread … place on top of brown sugar mixture.

Beat 6 eggs – add 2 c. milk and 2 t. vanilla. Pour over bread.

Cover and refrigerate overnight.

Bake at 350 for 30 min.

Drizzle with caramel and sprinkle with powdered sugar before serving.

Fireworks

That was all I could say.

For several minutes ... fireworks. I don't always say a lot, but, I'm seldom at a total loss for words.

When leaving the drift event on Saturday, the drive was easy ... until ... we got onto the major interstate. Traffic was stopped. For miles. For more miles than you could see either in front of or behind you.

We had already decided to eat dinner at a place two exits ahead. So, we hung in there - which was all we could do - and then took the exit. Only to be on a main road that looked as congested as the interstate did.

After some time, we arrived at the restaurant. We had less of a wait on a Saturday night, than it had taken us to get there. We knew we would enjoy a leisurely meal and by the time we would leave, the roads would be clear.

Well, the main road was. Even the interstate was. For about a half mile. Then we were stopped. Once again.

While trying to figure it all out, there was a sound in the distance. Not quite thunder, but noisy. Shortly thereafter, the bursts of color appeared in the sky. Fireworks. Fireworks.

Once we inched our way past the final exit to "see the fireworks", all lanes of traffic opened up and we had a clear drive home.

To think that for such a distance - for so many hours - life could just stop.

All in the name of ... fireworks.

OK ... prior to the fireworks, we had a wonderful day at the speedway. (video footage to come soon!) The drift event was great and the weather was beyond perfect. Cool, sunshiny and breezy ... all rolled into one. So glad that Kristen had been able to work me in for a haircut the day before.

Yesterday was a wonderful day. The sun was shining, the house was clean and friends were gathered. And, when friends gather, food is present.

I was the hostess for a Southern Living at Home party. I planned my menu around tried and true recipes : Chicken Spaghetti and

Corn Salsa

1 can corn, drained
1 can black beans, rinsed and drained
2 cans Ro-Tel tomatoes

Mix together and add a splash of Italian Dressing.
Serve with a scoop-able chip.

Add to the menu Fresh Fruit and Rolls/Butter. I also tried a new recipe for Sangria.

Then, for dessert I found this super easy and oh, so delicious recipe from The Pioneer Woman (from whom my Chicken Spaghetti recipe originated):

Pots de Creme
12 oz. bag semi sweet chocolate chips
4 eggs - room temperature
2 tsp. vanilla or a flavored liquor
pinch of salt
8 oz. strong hot coffee

Place in a blender the choco chips, eggs, vanilla and salt. Blend for about 20 seconds. Remove the circular disk from the blender lid and very slowly pour in the coffee while still blending (make coffee is h-o-t). Replace disk and continue blending for 1 min. Pour into serving glasses and refrigerate for at least 3 hours. Garnish with whipped cream, if desired when serving.

I used antique tea cups to serve this rich, creamy dessert in. Of course, I made extras that I poured into my virtually indestructible Longaberger dessert bowls for the guys.

When everyone had left, Christina and I went shoe shopping ...

It was a good day!

Unfortunately, hubby's back issues interfered with video ops, but here's one that's not too bad. Event was held at Turner Field.

A Place to Bark

When a storm blew open our walk out basement door not so long ago and our fur babies got out we were devastated. The whole experience turned our lives upside down. Although they were taken to the animal shelter - rather than being directly returned to us, we knew they would be well taken care of - and they were. We are forever grateful for the safe keeping they provided to our Max and Gretchen.

There is an independent non-profit that is working very hard to keep unclaimed dogs (and cats) from being put to sleep. I had heard of it before through artist blogs and websites, but didn't connect that it is not too far from where I now live. Please visit the blog of Bernie Berlin to learn more about her mission, A Place to Bark.

If you are in the position to make a donation - no matter the amount - you can do so on the blog or I have a badge on the right side of this blog that you can donate through. Her funding has been cut, along with much of her food supply source. After our recent experience, this is a cause I am proud to support and advocate for. Daily Life Goals

Wonderful little goals to reach for in our every day lives

1. Live with the “3 E’s”: Energy, Enthusiasm, and Empathy.

2. Life isn’t fair, but it’s still good. It’s definitely worth living to the fullest every day.

3. You’re on this earth to do things right and help others. Don’t worry what others are here for.

4. No one is in charge of your happiness except you. But that is a decision you can make.

5. Tape your late night shows if you want to, but get more sleep.

6. No matter how you feel, get up, dress up and show up.

7. The best is yet to come, if we work hard to get it.

8. When you wake up, complete the following statement, “My purpose today is to ____”.

9. Take a 20 minute walk every day. And while you walk, smile.

10. Try to make at least 3 people smile each day.

11. Laugh more out loud. It’s the ultimate anti-depressant.

12. Sit in silence for at least 10 minutes each day. Buy a lock if you have to.

13. Make time to practice meditation, yoga, tai chi, or prayer. This is daily fuel for our busy lives.

14. Play more games, and read more books, than you did last year.

15. Spend time with people over the age of 70, and under the age of 6.

16. Eat breakfast like a king, lunch like a professional, and dinner like an unemployed worker.

17. Eat more foods that grow on trees and plants, and eat less food that is manufactured in plants.

18. Drink green tea and plenty of water. Eat blueberries, wild salmon, broccoli, almonds and walnuts.

19. Realize that life is a school, and you are here to learn. Problems are simply part of the curriculum.

20. Clear clutter from your house, your car, your desk… let new and flowing energy into your life.

21. Forgive everyone for everything. Start anew every time you do, free of past mortgages.

22. Take yourself only as seriously as others do. You will find it isn’t as much as you thought.

23. Don’t try to win every argument. Certainly, stop before making anyone upset. Agree to disagree.

24. Make peace with your past, so that it won’t spoil the present.

25. Don’t compare your life to others’. You really have no idea what their journey is all about.

26. Don’t gossip, dwell on past issues, on negative thoughts, or on things you cannot control.

27. Envy is a waste of time. We already have all we need.

28. Life is too short to waste time hating anyone. Hating only hurts the hater.

29. What other people think of you is none of your business.

30. Family and friends will be there when you need them, if you are. Stay in touch. E-mail them to death!

31. Get rid of anything that isn’t useful, beautiful or joyful.

Long Time ... No Write

Wow. 2 months.

Started a new job the end of January. Only working 60%, but, I guess I'm just adjusting to actually having time at both the beginning and the end of each day for my family and myself - thus, no new blog entries.

TV. I think I've watched more in the last 2 months than in the last 2 years.

Meals. Eating at home a lot. Even though I have an hour for lunch each day, I'm brown bagging it most days.

Sleep. Naps, too. I think I might have been a kitty in my previous life.

Music. I'm actually able to practice on my piano each day. Just 5 minutes here and there seems like a luxury.

Friends. I've had out of town guests a couple of times. It is so good to have what seems to be my 'past life' connected to my 'current life'. Seeing them infuses me with an energy that we all get from socialization and pulls from within me a part of who am I that hasn't surfaced much since the move. They already know you - the good, the bad, the ugly. You don't have to put yourself out there to be discovered.

Most of all, family. Since this is my daughter's last semester in college, I'm really taking in all I can through her these last months. Going back and forth to Nashville fills many weekends. My son is able to come over in the later evenings and I can stay up to enjoy visiting with him. He's really excelling with learning classical guitar on his own and I really enjoy hearing his progress.

Fortunately/Unfortunately it's been the slow season for hubby's business. Unfortunately, work is not consistent and that drives everyone batty. Fortunately, since I'm home more, I get to enjoy spending time with him that I normally wouldn't be able to.

I also get to talk with and see my brother more often. That's really special to me.

There's also been challenges and heartaches. But then, it's all a part of living. And having your health along with friends and family to lean on makes one's life full and blessed.

... that's pretty much what the last week was for me.

Hubby was off work, so I went to class Monday night, to a mentoring session Tuesday afternoon, to a Beth Moore Bible study on Wednesday, did homework on Thursday, tracked down some textbooks Friday, went with hubby on a job detail Saturday, church and dinner with daughter in Nashville on Sunday. All the in-between times were just spent hangin' around - kinda like our kitty, Bootsie, does each day.

And now begins a new week ...

Long time, no blog.

Is it already mid-January?

Between enjoying my college age children home on semester break and getting my paperwork and classes in order for the upcoming semester, I've slipped away from blogland for this little space and time. It's been a good time of renewal.

As I was cleaning out my baking cupboard today, taking inventory of what should probably get used up now that the baking season rush is over, I came across a package of the Heath Toffee Brickle Bits that I used to make fudge. I remembered that I still had a tube of sugar cookie dough in the frig from my mass purchase when it was on sale. I also discovered a cinnamon/sugar mix packet from a frozen pretzel purchase.

So, here's what I did.

I opened the tube of dough and made 1/4" slices. I cut each slice in half.
I smooshed the dough into the brickle bits, coating both sides.
I rolled the dough/brickle into a ball and then rolled it in the cinnamon/sugar mix.
Baked at 350 for 12 min. Bake 12 cookies at a time and do not overbake. Let cool on sheet for 5 min.

They are delicious! I want to make them again around Valentine's Day, but after baking, coat the bottom of the cookies in white chocolate!

New Year's Day Eats

As I was walking through the grocery store, a fellow shopper requested to see a manager. One of the owners came to her assistance. She apparently couldn't find something and wanted to know what 'they' would substitute for it. She insisted that they must have it for dinner since it was New Year's Day. The man apologized, and then stated, "we know that true prosperity comes from the Lord, not from what we eat".

I certainly *know* that, but, I am one who enjoys keeping traditions. For me, they are a connection to those I love who came before me, as well as a connection to those sharing that particular tradition with me at that particular time.

After moving here, I found a brand of canned foods that make some of my southern traditions a little easier to prepare. There's nothing like made from scratch food, but, there's also nothing wrong with semi-homemade. (In fact, someone has made quite a living from sharing this philosophy of cooking/baking).

Anyway, the brand is Glory* and because hubby worked today and our dinner is not a formal one, it helped make the meal for this evening fall together quickly - Smoked Sausage, Black-Eyed Peas* (went with Hoppin' John for a little more flavor this year), Cabbage,* Mashed Potatoes and Mac and Cheese. For dessert, Sweet Potato* Pie.

The pie is in the oven and smells delicious. Enjoy your meal today with those you love.

Sweet Potato Pie

3 T. melted butter
2 large eggs
1 c. sweetened condensed milk
1 t. vanilla extract
1 t. cornstarch
1 can Glory Sweet Potato Casserole
1-9" deep dish pie crust

Preheat oven to 400 degrees, set rack in center of oven with a cookie sheet.
In a large mixing bowl combine all the liquids. Add the cornstarch and mix.
Add the sweet potato casserole and mix until smooth.
Pour mixture into the raw prepared pie shell.
Place filled pie shell in oven onto the cookie sheet. Bake at 400 for 10 min.
Reduce heat in over to 300 degrees and bake for approx. 40 min.
Test the filling. The filling is cooked when the tip of a knife inserted in the center is clean when removed. Bake till filling is set.
Carefully remove the cookie sheet with the pie from the oven. Allow to completely cool.

One of my favorites, but, I've never made any. Until yesterday. Why have I waited so long?

8 c. cored, chopped and unpeeled cooking apples
1 c. apple cider
1 c. sugar
1 t. ground cinnamon
1/4 t. ground cloves

Combine apples and cider in a crock pot. Cover and cook on low for 10 to 12 hours. Grind in a food processor. Return pureed mixture to pot and add sugar, cinnamon and cloves. Cover and cook on low for 1 hour. Pour into hot sterilized jar and seal. 1 quart.

Breakfast Casserole

1 lb. sausage
1 pkg. cream cheese
2 pkg. crescent rolls
3 large eggs, beaten
3 c. shredded cheese (reserve a little for topping)
1 onion, chopped

Brown sausage and drain. Mix sausage, cream cheese, eggs, onion and shredded cheese. Spread 1 pkg. of crescent rolls in bottom of baking dish. Spread sausage mixture over rolls. Sprinkle with more shredded cheese and cover with other package of crescent rolls. Bake at 350 for about 25 min. or until crescent rolls are golden brown.

French Toast Casserole

Grease 9x13 baking dish. Combine 1 c. brown sugar, 1/2 c. butter and 2 t. light corn syrup and bring to boil. Pour into baking dish. Layer 1/4 inch slices of one loaf French bread on top of syrup mixture. Beat 6 eggs, 2 c. milk and 1/2 t. vanilla. Pour on top of bread. Refrigerate overnight. Bake in the morning at 350 for 30 min.

The grades are in ... it's official ... my daughter will be graduating in May.

Reviewing her transcript online prompted me to pull mine out of the cupboard and compare. It was exciting to see the joy in her eyes as she truly realized her accomplishments all listed in front of her. We confirmed her graduation information. We reviewed each class and the grade received. All that's left is the student teaching.

That is one memory that will be etched on my heart. I am so grateful to have experienced that special moment in time with her.

What an awesome Mother's Day gift!

Pretzel Chicken Tenders

Made this for the first time tonight. Passed the 'new recipe' test with the family.

I took 12 chicken tenders and dunked them in honey mustard salad dressing and then coated them with pretzels I had chopped in the blender. Baked on a cookie sheet in a 350 degree oven for 20 minutes.

Served with noodles, veggies, rolls and butter.

Will be adding this to the 'keeper' list.

Milky Way Cake

Another quick and easy recipe for this busy season. Served with ice cream, drizzled with caramel sauce and topped with toffee, it's absolutely wonderful! The cake alone is moist and yummy. I'll have a slice in the morning with my coffee!

1 pkg of yellow cake mix with pudding
6 large Milky Way candy bars
1 stick of butter

1) Preheat oven to 350 degrees
2) Over low heat, melt the candy and butter together.
3) Mix the cake mix, according to package directions and add the chocolate-butter mix
4) Pour in an angel food cake pan or a 9 x 13 baking dish
5) Bake until toothpick placed in the center comes out clean

I used my Longaberger bundt cake pan. I also placed the pan on a baking sheet before placing it in the oven to catch any overflow, since the bundt pan is a little smaller. Took a little over an hour to bake.

Hooked on Fudge

OK ... my friend Elizabeth and I have had the best time trying different flavor combinations and gift giving presentation ideas with the easy fudge recipe. Probably because she is a young mother of four children and I am well, older and slower!

Anyway, when you visit fudge shops, the fudge is always in a slab that they they slice to order by the 1/2 lb., pound, etc. Rather than cube the fudge, I wanted to place a nice thick slice into one of those little long candy boxes. So, I poured the chocolate, butterscotch, toffee (my favorite so far) into a buttered Longaberger loaf pan - love. love. love Longaberger's vitrified china. The question became, just how would I successfully get it out.

After letting the fudge come to room temperature after allowing it to set up in the refrigerator, here's what worked for me:

First, taste test the fudge by wedging a little bit out of one of the corners. You want to be sure that it's truly a tasty treat! (oh. my. goodness. This one really is!!!)
Slice the fudge down the center, width-wise.
Using a flat edge spatula that is just about the same width as the pieces, run it down along the sides. Then gently lift up one of the sides with the spatula, placing it on wax paper.
Do the same to the other section of fudge.

Since I don't have my cute little boxes yet, I placed the fudge back into the loaf pan on the wax paper. When it's time to slice the fudge, I'm going to try using unflavored waxed dental floss for a smooth cut.

Then, box it, wrap in ribbon and put a gift tag on top.

It turned into this!
Absolutely beautiful.

By the time class ended lasted night, the sleet that was coming down before I went in the building had turned to fluffy wet flakes. I decided to stop at the little market closest to the house on the way home so I could pick up what I needed to make some soup and more fudge the next day. This is my 3rd winter here and I still am adapting to the local mind set in regard to snow. When I arrived at the market, there was a hand written sign posted on the door:
Closing early at 8pm because of the weather. I really wanted a good picture of it, but settled for a distant shot from the car so as not to look suspicious! lol

Going to make more fudge today.
This time, I'll use 2c. semi-sweet chips and 1c. butterscotch chips with toffee stirred in.
Then, I'll make just an all chocolate batch.

Made some Taco Soup ... yum!

Brown 1 lb. lean ground beef with chopped onion, 1 pkg. taco seasoning and 1 pkg. ranch dressing mix.
Add 2 large cans diced tomatoes and 1 can Rotel tomatoes.
Drain 1 can black beans, 1 can pinto beans and 1 can corn. Add to soup.
Heat through and serve with grated cheese, sour cream and tortilla chips.

Retrieving things from my 'stash' was quite the task since just about everything is still packed in boxes. But, I did find ribbon, metal letters and of course, my Zips and Zots!
(I still think I wound up on the ThermOWeb Design Team because of my wonderful tribute to Zips and Zots over any creative talent! *Ü*).

So, then I took this ...

Five Minute Fudge

Heat a medium size saucepan while opening one can of sweetened condensed milk and your chocolate chips.

Add milk and one bag chocolate chips plus 3/4 bag of another flavor chips.
Melt over low heat while stirring to blend.
Remove from heat, add 1t. vanilla and pour into greased 8x8 pan.
Cover and refrigerate to set.

That's it. Easy, easy, easy!

I used mint chips for the other flavor. Butterscotch would be good, as would peanut butter.
White chocolate chips with peppermint chips added would be wonderful! Just be sure to use clear vanilla.

Catching Up

Let's see ...
Going back to the week of 11/24

I enjoyed the week with my daughter while she was home on break. We went to Knoxville on Wednesday to the East TN School for the Deaf. While in Knoxville, we ate at Regas for old time's sake.
Spent Monday and Tuesday 'recovering' from a fall. When taking the dogs out, Max spotted a small furry animal and decided to go after it - all the while pretty much dragging me behind.
Thursday we enjoyed a wonderful Thanksgiving meal with my brother and then drove to Chattanooga to spend a couple of hours with family there that afternoon.

Friday, hubby and I took off for MI. Stayed with some dear friends. I attended my 30 year high school reunion, visited with hubby's family, went to our old church, discovered Biggby coffee and enjoyed the snow! We came home late Tuesday evening.

By this time, both kiddos were back in school and I had to get a paper written before my class on Thursday evening. Spent Friday running errands and rediscovering my home. Today was spent in Nashville visiting our daughter. She's about to wrap up a semester and needed a little break before this last week. Took her some fudge ... I'll share the recipe. Easy, easy, easy!

Quick Appetizer Recipe

One of the new state requirements for directors now involves college level management courses. So, the group of us who are taking the first class this semester are making the most of it by bringing snacks each week to enjoy midway through the 3 hour class. Here's the recipe for one of the goodies we've enjoyed recently. I made it tonight to have for the weekend.

Clam Dip

8 oz. Cream Cheese
6.5 oz. can chopped clams
2 green onions, chopped

To softened cream cheese add the clams and onions.
Stir in liquid from the clams until desired consistency.

Serve with Triscuits and enjoy!

Southern Chai Tea Latte

Found a recipe in the December 2008
Taste of Home Simple & Delicious
for a Chai Tea Latte.

Changed it up a bit to use what I had on hand.
It was a wonderful taste treat on a beautiful fall day.

2 individual tea bags
1 t. ground cinnamon
1 t. allspice

Place above ingredients in filter of a drip coffeemaker.
Add one cup water and brew.

1 c. milk
1/4 c. packed brown sugar
2 T. refrigerated International Delight Creamer,
Southern Butter Pecan.

Combine these ingredients in a small saucepan.
Cook and stir over medium heat until heated through
and the sugar is dissolved.

Stir in brewed tea.

Pour into your favorite mug ... share with a friend ...
and enjoy!

Went to the Dr. this week for one thing, found out about something else.

I'm not unlike so many others who have so much on their plate each day.
I just know that I must be more selective when choosing from life's buffet!

Disguises

After contemplating several solutions to concealing the thermostat,
this is the one that worked.

I found the wall mount bird cage at one of my favorite shops in town, The Market.
It was so clearanced out that it was almost free.

I took the back of the cage off to just under the roof line.
There's plenty of space for air to circulate so that it doesn't interfere with the functioning of the thermostat.

Almost finished

Five hours later and well into the night, the walls in the living are finished. Hubby and I started after dinner and worked together with only one coffee break to help us stay awake.

The sun shone brightly this morning as we literally basked in the enjoyment of a job well done.
We will be painting the fireplace and the little niches at the tops of two gabled walls tonight after our daughter heads back to Nashville (with not only my art print in tow, but the rest of the chocolate gravy from breakfast this morning).

That will leave two bathrooms and a laundry room to complete.
Oh, yeah ... two more bedrooms, too.

My Pre-Rest Day

As usual, 4:30 am rolls around and I wake up - wide eyed, ready to go. But, this is my day of pre-rest and I must not allow myself to wander to the coffee pot before 7am. So, somehow, I willed myself back to sleep, to awaken to the morning rays as they began to fill the room. As I wondered what time it was, the clock in the living room chimed the answer for me - 7am. But, somehow yet, I had the desire to just enjoy my cozy spot in the bed, so I did.

An hour or so later, I emerged from my corner of the world, ready to take on a day of painting.

It started out good ... hubby had committed to getting this room painted today. He was armed with painter's tape and the ladder, creating a lovely green outline for the paint brush to follow. I was in the kitchen making breakfast.

Then it began.

The sound of his phone resonating from the downstairs office.
Who could possibly be intruding on our long awaited day of painting?

A customer.
Or rather, the install sales department at one of the stores who was calling for the customer.
The customer whose job my dear hubby had neglected to write in his appointment book.

So, he bid farewell to myself and all the furniture now pushed to the center of the room.
Off to save the day for someone else.

By now, signs of a beautiful fall day are well in place and the sunshine beckons me out of doors. I still had to go into town to pick up the paint before the store closed at 1pm. Definitely had to get the paint today so we can make up for lost time tomorrow. (And, of course, the store is closed on Sundays.)

After purchasing the paint, I decided to enjoy more of the sunshine. Somehow, my car wound up at one of my new favorite places in town, The Market.

I had seen some canvas prints there a while ago that I knew would look great in the bedroom. I had put it off long enough. I had to know if they were even still available. Guess what?
They were.

Can't wait to get them hung later today.
The subtle green just pops against the wall color.

I also found an art print I just loved.
Well, just so happens my daughter loved it just as much.
It will be going back to Vandy with her when she leaves tomorrow.

This one has the saying, 'Love who you are'.
Just sounded right to me today. Sometimes amidst all of the roles a person plays, you begin to loose touch with just who you are. What is it we do and do well? Are we just having to wear so many hats that we are doing things just to get them done and not really able to recognize our specialties? Whatever it is, we need to remember they all work together to make us who we are in this space and time - and that it is good.

Bubble Tea

Fat Straw.

That's the name of the bubble tea place I went to with my daughter in Nashville.
I remember selling this tapioca concoction when I was with Brown Bag Gourmet Goodies. It's been several years since that time and I've not had a bubble tea since - until today.
There were so many choices ... tea milk, fruit milk, smoothie ...
I played it safe - Cafe Latte.

Next time I think I'll try the Cake Batter. That should be yummy with tapioca balls.

Where did the weekend the go? I think I missed my day of 'pre-rest' yesterday.
It was a good day, tho. We had a playground work day at the center. Had a good time developing relationships with the parent volunteers. Nothing like working together toward a common cause to bring about success - and that it was.

On the way to Nashville today, I finally stopped in Mt. Juliet at the Home Goods store. Have been wanting to check it out for quite a while now. Needless to say, saw some very lovely things. Hubby was glad that we were on a time line!

What A Wonderful Way to Spend a Saturday

Before leaving work Friday, one of the teachers asked me what I was doing this weekend. The first thought that came to me was to try to get another room painted. I really do want to finish up the last few rooms, but, I definitely need to be in the right mindset to do so.

As I drove home, I was reminded by colorful signs that the Quilt Festival was Saturday. Oh, yeah ... that's what I'm going to do. Walk around and see all the creations and find a sale or two.

But wait ... I forgot! The drift event from last month was rescheduled for ... yep, Saturday!

That's it. That's my final answer. I'm going to Nashville to watch my son race.

And that is exactly what I did. I even rode along on one of his runs - camera in hand.

Mulled Cider

Field editor Glenna Tooman of Boise, Idaho dresses up apple cider using lemonade, orange juice, honey and spices. "It makes a welcome treat for a party," she notes.

SERVINGS: 18

CATEGORY: Beverages

METHOD: Other stovetop

TIME: Prep: 5 min. Cook: 45 min.

Ingredients:

4 cups water
2 teaspoons ground allspice
1 cinnamon stick (3 inches)
Dash ground cloves
1 gallon apple cider or juice
1 can (12 ounces) frozen lemonade concentrate, thawed
3/4 cup orange juice
1/3 cup honey
1 individual tea bag

Directions:

In a large kettle, combine the water, allspice, cinnamon stick and cloves. Bring to a boil. Reduce heat; simmer, uncovered, for 30 minutes.
Add the remaining ingredients. Return just to a boil. Discard cinnamon stick and tea bag. Stir and serve warm. Yield: 18 servings (4-1/2 quarts).

Sangria

Dissolve together:
1/2 c. sugar
2 c. water

Combine:
2 c. orange juice
2 c. red wine
1/2 c. brandy

Add sugar water/mixture.

Garnish with orange, lime and lemon slices.
Chill overnight before serving.

Dear Mom,

How I miss you today! My heart always carries a twinge of pain that you're not here. But, somehow, on this your birth day, it goes beyond a gentle pull to a tremendous tug on my heart's strings.

I miss you. So much life has continued and evolved over the years. Why does it seem like only yesterday?

Only yesterday that you joined me and thumbelina for a tea party.

Only yesterday that you decorated a shoe box with aluminum foil and red ribbon for my Valentines.

Only yesterday that you and I would sit in the living room, look at new magazines and eat junk food.

Only yesterday that we would enjoy the fresh orchids in Hawaii.

Only yesterday that you were there when my children were born.

Only yesterday that I said my final good bye to you.

Through all those yesterdays I've built today.

Today, I celebrate the sunshine and the young buds in my garden.

Today, I celebrate my faith and the hope and strength it gives.

Today, I celebrate a husband who lovingly cares for me.

Fall Fest

The Fall Fest is this weekend in our little town. The streets around the courthouse square are blocked off, making room for cook-offs, music and fun fall festivities. This is also a weekend that is difficult emotionally for me, so to cope I turn to my creative side for some therapy.

After touring around various blogs posted at The Inspired Room this past week, I gathered together some dollar tree finds and a hot glue gun and I went to work - literally.

Project 1: a floral and ribbon swag which I attached to my office door with a clip ring and upholstery nail. Project 2: white pumpkin table top topiaries to adorn the front counter.

Once I was home, I made a quick and easy Apple Crisp.

2 cans apple pie filling
1 box jiffy cake mix
1 stick butter, melted

Place pie filling in a square baking dish. Top with the cake mix and drizzle the melted butter over it. Microwave for 6-8 min. on HI or bake at 350 for about 15-20 min.

Then, I started dinner ...

Maple Apple Chicken
4 small boneless skinless chicken breast halves
1/2 c. sliced onions
2 red cooking apples, sliced
1/2 c. maple-flavored or pancake syrup
1/3 c. Italian dressing

Preheat oven to 350. Spray large ovenproof nonstick skillet with cooking spray. Heat on medium-high heat. Add chicken; cook 3 min. on each side or until lightly browned on both sides. Remove from heat. Place onions on top of chicken; surround with apple slices. Mix syrup and dressing; pour over chicken. Bake 20 -25 min. or until chicken is cooked through. Spoon syrup mixture in skillet over chicken just before serving.

Going to serve some good ol' sweet potatoes along with this tonight.

(Post-serving note: I melted Provolone cheese on each piece of chicken and added a strip of crispy bacon before spooning the syrup mixture, onions and apples over it. Delicious!)

These along with my Quince Spice Paddywax candle burning in the kitchen makes it a fall comfort kind of day at my house. Just the kind of day this gal needs.

So Fall Begins With Labor Day

I've barely settled in with basic decorating, let alone focusing on the season.
But, one thing that symbolizes the season to me is family.

It's this time of year when I think of family reunions - not just in the literal sense, but, in the spirit of gathering during my favorite time of year.

My tribute to the season is my Heritage Nook. There was a space in this house that needed a focus. What better one than family.

The space contains family Bibles - dating back to the late 1800s - and precious photos.
A mirror serves as a symbol that when I look into it, I remember those who came before me.

Fall ... a season of change. Life is but a series of changes that create history and form the future.

Here are a couple of recipes I used this weekend.

First - Chicken Spaghetti
from 'The Pioneer Woman Cooks'

Instead of the green pepper and pimentos, I just used an equal amount of red pepper.
I also used only white meat and omitted the cayenne pepper.
It was served alongside a salad with honey french dressing and fresh baked rolls

The next recipe is for a quick and easy Fresh Salsa.
In a large bowl combine:
2 cans black beans (rinsed)
2 cans corn - drained (I used one white and one yellow)
2 cans Ro-Tel tomatoes with green chilis (I used 'original')

Add enough Italian dressing to blend everything together.
Keep in frig overnight to marinate before serving with tortilla chips.
Goes great with a round of Hand and Foot!

All the furniture is back in its place. We even finally got the mirror hung. Those Phantom Hooks really do work! The wall color is French Grey Linen by Porter Paints.

I had a feeling that one day, I would not be able to use the blog service I started with a couple years ago. I'm afraid that day has come. I was just getting back into the groove and was on a roll.

Since everything does work together because it truly is a serendipitous life, we shall just start at the very beginning of now! But, I do want to 'recap' so that my attempt to continue on will have a point of reference.
